Calendula Orange Salad

Hardy annual with lime/green, lanced-shaped alternate leaves, soft and sticky to touch. Brilliant flowers heads in colours of yellow or orange, creates a vivid splash of colour in the herb garden.

Use: Calendula has been regarded as one of the very safest and best herbs for treating skin problems, particularly inflammation due to damage or infection. Use a strong tea as a wash on sunburn and rashes, chapped hands, rough skin and many more. The tea will also help the sores of chicken pox and measles, corns, warts, ulcers etc. The tea can be used for reducing large pores and varicose veins.
Dose: For tea, use 1 teasp. Of dried flower petals or 4 teasp. of fresh to 1 cup of boiling water and steep for 10 mins. Take 1-3 cups a day. The tea can also be applied externally.
Calendula flower petals look fabulous as a garnish in salads, and can also be added to stir fries, vegetable dishes, soups, cheese cakes, scones, fruit cup, eggs, custards and puddings.
